ZUCCHINI AND GREEN PEA SOUP
This soup is associated with lightness for me, but at the same time with the approaching autumn, when for dinner I no longer want fruit, smoothies, or salads. Soup is our dinner choice No. 1 in the cold season. And this soup is so gentle, alkaline, refreshing, but at the same time quite filling. I often cook it when I want something lighter, but at the same time filling, or when I feel that my digestive system is tired and needs a break from all sorts of fancy food. It does n

FETA
I brought this recipe back from a plant-based chef training. We tried it at home, made a few adjustments to suit our taste and now it's one of those discoveries that our whole family absolutely loves. I'm excited to share this recipe with you as well. Sometimes you just crave that "cheesy flavor" and this recipe delivers the texture, taste and even the salty goodness of traditional feta cheese, all without any dairy products. By the way, this recipe can be versatile: you can

SHREDDED MUSHROOM SALAD
I’d like to share one of my favorite salads from recent times. It’s Asian-inspired, delicious, and light, packed with plenty of greens, aromatic herbs, and crisp, refreshing vegetables. In short, it’s both tasty and beneficial for your health! Plus, it can be prepared in no time, especially if you have some prepped ingredients in your fridge. Ingredients Leafy greens - spinach, arugula, romaine lettuce, etc. - I use whatever I have on hand. Carrots Sprouts (optional) Edamame

SHREDDED MUSHROOMS
This is one of my favorite recipes from the past few months. My relationship with these mushrooms right now is akin to my love for cauliflower wings :) It's a true romance—wonderful flavor that fits perfectly in various dishes. I absolutely adore making Asian-inspired salads with them, and my family loves them with tacos (this has become a new "must-have salsa" in our household). They’re also fantastic in burgers, sandwiches, or wraps, and even as a sprinkle on creamy soups.

MUSHROOM BURGER
This burger is, in my opinion, the closest in taste and appearance to a meat-based burger. For some, this is a plus, while for others, it might be a drawback (for example, I personally find anything that smells or resembles meat quite off-putting). However, it is definitely worth trying, as it is hearty, full of flavors, and incredibly comforting. Enjoy it in a bun, use iceberg lettuce instead of a bun or serve it as patties alongside vegetables, rice, or potatoes for lunch o

HUMMUS WITH MUSHROOMS
This hummus has made its way to our home from our beloved Lebanese restaurant in Valencia. There, you can try at least five different types of hummus, but our absolute favorite is the one with mushrooms! It’s incredibly tasty, creamy, and comforting - perfect for the colder months, yet versatile enough to enjoy in warmer seasons as well. When it's mushroom season, I highly encourage you to experiment with this hummus using various types of mushrooms and discover your favorite

GREEN GAZPACHO
I really enjoy this soup because it’s a delicious and easy way to incorporate more greens into my daily routine. Scientists say that to keep our bodies healthy, reduce inflammation, strengthen our immune systems, and cleanse our internal systems of accumulated fats, toxins, and the like, we should include as many greens as possible—ideally 4 to 6 handfuls a day. This cold green soup is a fantastic way to consume at least two servings of greens in one sitting. So, this recipe

WATERMELON SMOOTHIE
Every summer morning begins with watermelon. It’s such an amazing fruit! Composed of 90% pure natural water, watermelon rehydrates you down to the cellular level, helping your body detoxify and bid farewell to the pathogens and toxins lingering in our systems. It’s rich in vitamin C, lycopene, and other antioxidants that protect our bodies from free radicals. In short, it’s a true treasure gifted to us by nature during the summer season! However, sometimes you buy a watermelo
