MUSHROOM BURGER

This burger is, in my opinion, the closest in taste and appearance to a meat-based burger. For some, this is a plus, while for others, it might be a drawback (for example, I personally find anything that smells or resembles meat quite off-putting). However, it is definitely worth trying, as it is hearty, full of flavors, and incredibly comforting.


Enjoy it in a bun, use iceberg lettuce instead of a bun or serve it as patties alongside vegetables, rice, or potatoes for lunch or dinner.


It’s also perfect for packing in children's lunch boxes when sending them off to school. In short, it’s a versatile idea for your plant-based table. I hope you give it a try and enjoy it!

Ingredients


Serves 6


  • 120 g walnuts

  • 250 g chopped mushrooms (button mushrooms or any other you like)

  • 140 g frozen green peas (thawed)

  • 1 medium onion

  • 30 g fresh parsley

  • 1 teaspoon mustard

  • 3-5 cloves of garlic (adjust according to your taste for spiciness)

  • 40 g buckwheat flour

  • Spices: salt, cumin, pepper, oregano, curry, dried onion, and garlic powder



Instructions


In a food processor, I pulse the walnuts until they are roughly chopped. Then, I add the mushrooms and pulse a few times, followed by all the remaining ingredients. I pulse just enough to create a uniform mixture, but not to a completely paste-like consistency – it's important to retain some texture for chewing.


I moisten my hands with water and shape the mixture into patties.


I bake them in a preheated oven at 200°C for about 40 minutes. Once baked, I let them cool – during this process, they will firm up a bit.

I usually serve burgers with a bun, iceberg lettuce, tomatoes, onions, pickles, salad leaves, avocado, or guacamole. However, they also pair wonderfully with a salad or a rice bowl.

Here is my "naked burger" with iceberg lettuce! It's a much lighter combination for the digestive system, but at the same time, I find it more delicious!

P.S. These burgers stay fresh in the refrigerator for up to 5 days, and if I freeze them, I have a quick dinner option for a long time. This will come in handy when the school year starts! Sometimes, I shape them into small patties, which are perfect for packing in kids' snack boxes for school. These burgers are delicious both hot and cold!
