GREEN WAFFLES

Here’s another recipe for your brunches. Green waffles are nutritious, packed with plant-based proteins and enriched with leafy vegetables. They’re not only delicious for your taste buds but also beneficial for your gut and overall health. I love making them not just for breakfast alongside salads but also as a "bread" option next to hearty soups on chilly autumn or winter evenings. These waffles also serve as a great nutritious snack for road trips or for kids' school lunches.

Ingredients
0.5 broccoli
A handful of spinach
2-3 cloves of garlic
240 g of chickpea flour
120 ml of warm water
Spices: salt, pepper
For the sauce: hummus, yogurt or your favorite sauce
Instructions
I blend broccoli and spinach, then crush in some garlic cloves.
In another bowl, I mix chickpea flour with water and spices.
I pour the batter over the vegetables and stir everything together well.
I cook it in a waffle maker until it’s golden brown.
I serve it with hummus, yogurt and refreshing vegetables.
