VANILLA ICE CREAM WITH BERRIES

Vanilla plant-based ice cream is a daily treat in our home during the summer. We never get tired of it! This year, we’re enjoying it even more - topped with frozen berry jam and fresh berries. I'm excited to share this recipe with you; it’s truly one of the tastiest recipes that no family member can resist. Everyone happily enjoys it for breakfast, dessert, a snack or even lunch on a hot summer day. Plus, since we have a variety of berries available, this one recipe allows for countless delicious variations!

Ingredients
Vanilla ice cream (see recipe)
A bag of frozen berries (you can use a variety of different ones and change them daily to create unique flavors - mixed forest berries, blueberries, cherries, raspberries, etc.)
Fresh berries / figs
Instructions
I take the frozen berries out of the freezer about 20 minutes before preparing the dessert and let them thaw a bit (to make them easier to blend).
Next, I make plant-based vanilla ice cream according to the recipe.
I pour the frozen berries into a blender, add a splash of water or coconut water to help them blend smoothly and blend until I achieve a uniform consistency. I adjust the amount of water to control the thickness of the "jam," but it shouldn't be too runny since we'll be pouring it over the ice cream.
In a bowl, I layer the vanilla ice cream, then the berry jam and top it off with additional berries or sliced figs.
If I want to make it a bit more "fancy," I sprinkle a mixture of coconut sugar and cinnamon on top, which adds a hint of caramel flavor.
