PANCAKES WITH BERRIES

These pancakes are a refreshing, light choice for breakfast. Personally, I think these are my favorite from our family's collection of pancake recipes. I love them for the freshness that the berries bring and if you make some homemade forest berry jam to go with them, you can really give yourself a big bonus. It’s a great way to enrich your morning menu with nature's superfoods!

Ingredients
150 g of flour (I use oat flour)
300 ml of water (can be substituted with plant-based milk)
150 g of blueberries (can be replaced with other berries you like)
A pinch of salt
1 teaspoon of baking powder
3-4 tablespoons of agave syrup or another sweetener of your choice
For serving: berries / forest berry jam (see recipe) / honey / agave syrup
Instructions
I mix the millet with baking powder, salt and water.
Then, I add agave syrup and berries and stir everything well.
I cook the pancakes in a heated skillet for a few minutes on each side (or until they are golden brown). I use ceramic-coated pans, so I cook them without any oil. If your skillet is different and requires oil, just coat the pan with a thin layer of coconut oil.
I serve the cooked pancakes with fresh berries or forest berry jam, drizzled with agave syrup.
