TACOS WITH CABBAGE

Cabbage? I know, I know... it doesn't sound very appealing, but honestly, this dish is incredibly delicious. The recipe is supposed to be called tacos with cauliflower wings and cabbage salad, but that's quite a mouthful, so I simply named it with cabbage, and I’m not lying - after all, cauliflower is a type of cabbage, just a different variety. By the way, cabbage is extremely beneficial for our health and scientists recommend that we eat at least one serving of it every day. So, by making these tacos, you'll be enjoying something both tasty and healthy.

These tacos with cabbage are much lighter (on the digestive system) than the tacos with cauliflower that I described earlier. Both dishes are delicious but one is fresher while the other is heartier, so you can choose based on your mood.


P.S. The photo isn't the most photogenic, but it rained all weekend, so the lighting was poor. I'll take a much nicer photo when the sun is out! :)

Ingredients


  • Cauliflower wings (see recipe)

  • Fresh cabbage (for photogenic tacos, use red cabbage; if you don't have it, regular cabbage works perfectly in terms of flavor)

  • Fresh lemon juice

  • Honey, brown sugar or your favorite sweetener

  • Plant-based yogurt

  • A few garlic cloves

  • Sprouts

  • Avocado

  • Corn tortillas

  • Fresh herbs: cilantro, green onions

  • Spices: salt; if you like it spicy, add chilli peppers or sriracha sauce


Instructions


I prepare cauliflower wings according to the recipe.


I make fresh cabbage salad by shredding the cabbage into thin strips (I use a mandoline but if you want it finer, you can use a grater or an S-shaped mixer). I squeeze in some lemon juice, add salt and sweetener to taste. I mix everything well and then massage it by hand to ensure the cabbage absorbs the flavors.


I make guacamole by mashing an avocado with a fork, squeezing in a bit of lemon juice and adding salt to taste. I mix it all thoroughly.


I prepare a yogurt dressing by squeezing a few garlic cloves into plant-based yogurt, adding a little salt and lemon juice and mixing everything well.


I chop up some fresh herbs.


I warm up corn tortillas.


I make tacos by taking a warmed tortilla, adding a spoonful of yogurt dressing, some guacamole, cabbage salad and cauliflower wings. On top, I add chilli and sriracha sauce (if you don’t like it spicy, feel free to skip this step). I finish the tacos with sprouts and fresh herbs and then I dig in!
