TOFU SANDWICH

These sandwiches are perfect for your husbands, kids, travels or those days when you crave comforting, hearty plant-based food. My husband loves this kind of meal, so he makes sure our family's recipe collection includes more than just salads and Buddha bowls. He prepares this sandwich when I don't have time to cook, when we're traveling or when I'm away and he needs a quick meal to stave off hunger for a while. It's tasty, filling, plant-based and made from healthy ingredients. I believe it's definitely worth trying for you too!


Ingredients
For the tofu
400 g of firmed tofu
1/4 cup of agave syrup
1 tablespoon of tomato paste
1 tablespoon of paprika
1 teaspoon of salt (or to taste)
1 tablespoon of soy sauce
1 teaspoon of chili pepper (don't use if you don't like it spicy)
A pinch of black pepper
For the sandwich
Bread (homemade sourdough bread (see recipe), burger buns or any of your favorite bread)
Salad greens (iceberg, romaine, spinach or arugula)
Tomatoes
Avocado
Cashew cream sauce (see recipe)
Instructions
For the marinade, I combine the ingredients in a bowl and mix well until the mixture is smooth. I cut the tofu into pieces of the desired size and add them to the marinade. I make sure to coat the tofu pieces thoroughly so they're completely covered in the sauce. I let the tofu marinate for at least 15 to 30 minutes (or preferably a few hours) to allow the flavors to soak in.
I preheat the oven to 190°C. I arrange the tofu pieces on a baking sheet lined with parchment paper. I bake them for about 15 to 20 minutes, then flip the pieces over, brush on some extra marinade and bake for another 15 to 20 minutes until the tofu is nicely browned. If the pieces are thicker, I bake them a little longer.
I toast the chosen bread or burger bun. I spread some cashew white sauce on it, add the baked tofu, lettuce leaves, tomato slices and avocado slices. I then top the sandwich with another slice of bread!
