SWEET POTATO PATTIES

Sweet potato patties for your lunch, dinner or even weekend brunch. This hearty, delicious and healthy dish can be quickly prepared with just a few ingredients, making it a favorite among both men and children. So, I invite you to give it a try!

Ingredients
A large sweet potato (if you're cooking for more than two people, use at least a few of these potatoes)
Avocado
Cherry tomatoes
0.25 of a red onion
0.5 lemon's worth of juice
Sprouts
Spices: salt, pepper
Instructions
I wash the sweet potato and slice it into 1.5 to 2 cm thick rounds. I place them on a baking tray lined with parchment paper. I sprinkle them with salt and put them in a preheated oven at 200°C for about 45 minutes.
While the potato slices are baking, I prepare the guacamole: I chop up cherry tomatoes and a red onion. I mash the avocado with a fork, season it with salt and pepper and squeeze in some lime juice. I mix it all together with the tomatoes and onion, making sure everything is well combined.
Once the potatoes are done baking, I arrange them on a plate. On top of each slice, I add a few teaspoons of guacamole. I garnish them with some sprouts.
I serve them alongside some refreshing vegetables.
