CANDIES WITH PISTACHIO CREAM

I really love dates and the sweets made from them, which always sparks new ideas for creating more candy using dates. This time, I drew inspiration from the incredibly popular chocolate from Dubai, but of course, this is a much healthier version - allow me to present to you dates filled with creamy pistachio filling.

Ingredients


For filling:


  • 1 cup of coconut cream (made by chilling a can of coconut milk and separating the cream from the liquid)

  • ½ cup of pistachios

  • ½ cup of soaked cashews

  • 6 soaked dates

  • Vanilla extract


For candies:


  • Medjool dates

  • Dark chocolate (I use at least 70% of cocoa)

  • Chopped pistachios

  • Salt


Instructions


I put the ingredients for the pistachio cream into an S-shaped mixer and blend everything well. Then, I place the cream in the refrigerator for at least a few hours.


Now, I’m making the candies:


I remove the pits from the Medjool dates.

I melt the chocolate in a double boiler.


For each date, I fill it with a creamy filling. Then, I drizzle melted chocolate on top and sprinkle with crushed pistachios and a bit of salt.


I place them in the refrigerator until the chocolate hardens.
