"RECORD-BREAKING" APPLE PIE

This unusual cake name just stuck after family members nearly fought over the second serving, checking to see if everyone had gotten an equal share, which left the cake dish empty. It was so delicious that it was devoured in record time - within just 10 to 15 minutes - leaving only the dish to lick clean and the question “When are you baking this again?”. We joked that this cake broke all records! That’s how it got its name. So, I probably don’t need to convince you that it’s worth trying to bake this cake, right? I should also mention that I’m thrilled to have created such a moist, decadently tasty cake without using butter, oil or gluten. This recipe is not only delicious but also made with healthy ingredients, just like all my recipes on this site!

Ingredients


For the apple layer:


  • 5-6 apples (you can substitute some of the apples with peaches or nectarines)

  • 2 tablespoons of cornstarch

  • 2 tablespoons of honey or another preferred sweetener

  • 0.5 cup of orange juice

  • Cinnamon


For the dough layer:


  • 400 ml of coconut milk (from a can)

  • 100 g of oat flour

  • 100 g of rice flour

  • a pinch of salt

  • 3 tablespoons of honey or another preferred sweetener


Instructions


I chop the apples into small cubes. I add a few tablespoons of starch, honey and cinnamon, then squeeze in the orange juice. I mix everything well and let it simmer over low heat for about 10 minutes. While the apples are cooking, I stir occasionally to prevent them from burning.


Next, I prepare the dough layer by combining all the ingredients in a bowl and mixing them thoroughly.


I place the cooked apples into the dish where the pie will bake. Then, I pour the dough layer over the apples. For a nice touch, I can sprinkle some cinnamon and a bit of coconut sugar on top, which will make the pie look even more appealing :)

I place the pie in a preheated oven at 200°C for about 50-60 minutes.


I serve it with vanilla plant-based ice cream (see the recipe).
