RAW SUSHI TACOS

A recipe for summer days or whenever you're craving light, refreshing meal that is nutritious and packed with water-rich, raw vegetables. Personally, I prefer this sushi taco version even more than the one made with cooked rice.

Ingredients
Cucumber
0.5 bell pepper
0.5 cauliflower
100 g of red (or regular) cabbage
Carrot condiment (see recipe)
A handful of sprouts
Fresh cilantro
Nori sheets
If desired – soy sauce, wasabi paste, pickled ginger
Instructions
I made a carrot condiment (see the recipe).
I put the cauliflower into an S-shaped mixer, chop it up and create raw "rice."
I slice the bell pepper and cabbage thinly. I use a mandoline to cut the cucumber into thin strips. I also chop some cilantro.
I cut the nori sheets into quarters.
I serve everything on the table – everyone makes their own tacos. How do you assemble it? I take a nori sheet, add the cauliflower rice, carrot relish, cucumber and bell pepper and generously top it with sprouts. If desired, I drizzle some soy sauce on top – and enjoy! It's delicious!
