PASTA WITH PESTO SAUCE

Pasta with pesto sauce is a quick and delicious choice for dinner or lunch, especially when you have homemade pesto in the fridge.

Ingredients


  • Homemade pesto sauce (see the recipe)

  • Cherry tomatoes

  • A handful of arugula (optional)

  • Pasta (your favorite, can be gluten or gluten-free)

  • Salt and pepper


Instructions


I cook the pasta in salted water according to the instructions, boiling it until it reaches an al dente texture.


Meanwhile, in a non-stick skillet, I sauté halved cherry tomatoes for a few minutes.


Once the pasta is cooked, I add homemade pesto sauce to it and mix everything well.

I'm assembling the plate - first, I place arugula at the bottom (you can skip this step but including it makes the dish much healthier and you'll find it easier to meet the recommended daily intake of greens). Then, I add the paste and top it off with sautéed cherry tomatoes.


If I have some on hand, I like to garnish it with a fresh basil leaf.


On the side, I always serve some refreshing vegetables - either greens or a tomato carpaccio.
