RAW APPLE PIE

The idea for this recipe comes from raw plant-based chef training courses. I've just added my own twist to it by incorporating plant-based ice cream! The result is a wonderful, comforting dish that's perfect for warm-season breakfasts, snacks, desserts or even light lunches on summer days when you crave something refreshing. Give it a try; I'm sure both kids and adults will love it!

Ingredients
3-4 apples
4-5 dates (optional, if you don't want extra sweetness)
Cinnamon
Vanilla extract
Vanilla plant-based ice cream (see recipe)
Your favorite berries
Instructions
I cut the apples into thin slices or any shape I like.
I sprinkle them with cinnamon, add a bit of vanilla extract and mix everything well.
I chop up some dates and fold them into the apple mixture.
This mixture can be prepared a few hours before serving, allowing the apples to soak up the cinnamon and vanilla flavors. However, if you're short on time or didn't plan ahead, it will still taste great right away.
I make some plant-based vanilla ice cream according to the recipe.

I'm putting together a "cake": I layer apple filling in a bowl, add plant-based ice cream and top it off with berries.
P.S. If you want more cinnamon and crunch, you can sprinkle a mixture of cinnamon and coconut sugar on top.
