CARROT CAKE ENERGY BITES

These energy bites are a fantastic snack or dessert for you and your kids. I love them because they aren't as calorie-dense as regular bites that are packed with various nut butters and they really do remind me of carrot cake - perfect for when you're craving something sweet but don't want to bake. Plus, you can enjoy these bites in just 10-15 minutes when your body sends out the signal "I want something tasty".

Ingredients
5-6 Carrots
50 g of Walnuts
50 g of Coconut flakes + about 20 g for coating
15 Soaked Medjool dates
Instructions
I peel the carrots.
I remove the pits from the Medjool dates.
I place the nuts, carrots and Medjool dates into an S-shaped mixer and blend everything well. If needed, I add a little water to make it easier to blend.
I transfer the mixture into a container. I also add some coconut flakes to the mixture (I don't use all of them - I reserve some for rolling the balls). I mix everything thoroughly.
Using my hands, I shape the mixture into balls. I roll the formed balls in the coconut flakes. I repeat this process until I've shaped all the balls.
The balls can be enjoyed right away, but I personally find them tastier after they've been chilled in the fridge for at least an hour.
