WILD BERRY JAM

This forest berry jam is perfect for pancakes and waffles but it also adds a delightful touch to a bowl of yogurt or oatmeal. It stands out from all store-bought jams, even those made by grandma, because it is much more nutritious. It retains its vitamins since it isn’t cooked for hours and there’s no added sugar. Plus, it can be made in just 5 minutes!

Ingredients


  • A bag of frozen forest berries (~300 g)

  • 1 tablespoon of honey or another preferred sweetener

  • 1 tablespoon of chia seeds


Instructions


I defrost the berries by simply taking them out of the freezer the night before and leaving them at room temperature.


Next, I place the berries in a pot and simmer them over low heat for about 5 minutes.


Then, I add honey and chia seeds, stirring everything together. I turn off the heat, cover the pot and let the flavors meld and the chia seeds swell for another 10 minutes.


Finally, I transfer the mixture into a nice glass jar and serve it alongside pancakes or waffles.


P.S. If there’s any jam left over, I keep it in the fridge. It should be consumed within a week since it’s not a traditional canned jam that can last for months. So, don’t make too much! Traditional jams can last that long because they contain a lot of sugar. Our grandmothers believed these jams were suitable and healthy, but in reality, jam is just a sugar concentrate with berries, which lose all their beneficial properties after being cooked for hours.
