ROASTED CHERRY TOMATOES IN CREAMY SAUCE

If a party is approaching and you're not sure what to make, this dish is definitely worth a try. You can prepare it as a snack or an appetizer any time of the year. It's suitable for both summer gatherings and colder months. At our gatherings, this dish is often one of the first to disappear, and there’s usually a line forming next to it. Both kids and adults love it. Bake some bread or naan on the side and I have no doubt you'll be crowned the best chef ever.

Ingredients
Cherry tomatoes (you can mix different sizes and colors of cherry tomatoes)
2-3 cloves of garlic
White sauce made from tofu (see the recipe)
Spices: salt, pepper, Mediterranean herbs
For garnish: fresh basil
Instructions
I place washed cherry tomatoes on a baking sheet lined with parchment paper. I season them, squeeze in some garlic cloves and put them in a preheated oven at 190°C for about 45 minutes.
Next, I prepare the white tofu sauce.
Once the tomatoes are roasted, I assemble the plate: I spread the white tofu sauce on the plate, then top it with the roasted tomatoes. I sprinkle fresh oregano on top.
I serve it alongside toasted bread or naan.

P.S. You can serve not just cherry tomatoes, but you can also roast pieces of pumpkin (especially during the fall season when we have plenty of pumpkins) or other favorite vegetables.
