BERRY MUFFINS / BERRY PIE

Yes, that's right! This recipe serves as a two-in-one option. Depending on your preferences, you can bake either muffins or a berry pie. Personally, I prefer the pie, while my kids love the muffins. I recommend trying both versions to see which one you like best. Both the pie and the muffins are delicious without being overly sweet, made from simple, wholesome ingredients. They can be enjoyed for breakfast, as a snack or even as dessert.

Ingredients
For 6 muffins:
150 g of oat flour (you can mix it with rice flour in equal parts if you like)
1 ripe banana
3-4 tablespoons of agave syrup or another sweetener of your choice
1 teaspoon of ground flaxseed
1 teaspoon of baking powder
1 cup of blueberries or any other berries you enjoy
0.75 cup of water (you can substitute with plant-based milk)
For a pie:
If you're making a pie, just double all the ingredients.

Instructions
I mash the bananas with a fork. In the same bowl, I add flour, flax seeds, baking powder and water. I mix everything well.
Next, I fold in the berries and mix everything thoroughly again.
I line the muffin tins with baking paper (this makes it easier to remove them after baking) and fill them with a few spoonfuls of the batter. I bake them in a preheated oven at 200°C for about 35 minutes.
If I'm making a pie, I pour the batter into a baking pan lined with baking paper and bake it in a preheated oven at 200°C for about 50-60 minutes.
If we're serving them warm, they can be enjoyed with homemade plant-based yogurt (see recipe) and homemade forest berry jam (see recipe), but it's really not necessary, as they're delicious on their own.
