BEETROOT RAVIOLI

I brought the idea for this recipe back from Lisbon, where I dined at one of the many plant-based restaurants. This snack is a fantastic option for your celebrations - birthdays, parties, and I think it would even be perfect for Christmas Eve. It's also great for everyday meals when you're looking for something a little different to accompany your salad.

Ingredients
1-2 medium beets
Juice of 0.5 lemon
Juice of 0.5 orange
Salt
Cream cheese (see the recipe)
Chopped walnuts
Sprouts
Instructions
I slice the beets into thin rounds using a mandoline. Then, I marinate them by squeezing in lemon and orange juice, adding salt to taste and mixing everything well.
While the beets are marinating, I prepare a creamy cheese (see the recipe).

I arrange the ravioli by placing beets on the plate, adding cream cheese on top and finishing with some sprouts.
I sprinkle chopped walnuts over it and serve it alongside refreshing salad.
