POTATO CHIPS, REIMAGINED

I spent a long time thinking about what to call this dish - potato chips, potato wedges or maybe just fried potatoes? None of these names fully captured the essence of the dish. These fried potatoes are different from what we're used to; they resemble chips but have a much denser and more authentic flavor than store-bought potato chips. In any case, they make a fantastic dish for both parties and everyday meals alongside salads, Buddha bowls or soup. They’re loved by both kids and adults alike.

Ingredients


  • Small fresh potatoes (if you can't find these, regular ones will work too)

  • Spices - salt, pepper, cumin, paprika, dried garlic and onion


Instructions


I wash the potatoes thoroughly and steam them until they're cooked.


While they're still warm, I place them on a baking sheet lined with parchment paper. I press each potato down with the bottom of a glass to flatten them into a shape similar to a chip.

I sprinkle each potato with spices and place them in a preheated oven at 200°C for about 45 minutes or until they are golden brown.


I serve them with guacamole (mashed avocado with spices and chopped red onion) or another favorite dipping sauce (cheddar sauce, BBQ sauce, white tofu sauce or white cashew sauce work perfectly).
