BUDDHA BOWL WITH BUCKWHEAT, TOFU AND FRIED CAULIFLOWER

This is one of my go-to weekday Buddha bowls during the colder months. It's packed with variety, rich in nutritional value, filling but not heavy. Exactly what a lunch choice should be, right?

Ingredients


  • Greens (spinach, arugula or whatever greens you have)

  • Sprouts

  • Cooked buckwheat

  • Tomatoes / cherry tomatoes

  • Red onion

  • Cauliflower florets (see recipe)

  • Tofu cubes (see recipe)

  • If you want even more heartiness, you can add slices of avocado

  • For the sauce - cheddar sauce (see recipe) and/or hummus sauce (see recipe)


Instructions


I prepare cauliflower and tofu cubes according to the recipes.


I chop the vegetables into my preferred shapes.


Next, I assemble the bowl: I add greens, tomatoes, onions, buckwheat, tofu and cauliflower into the dish. I serve the sauces on the side.
