BUDDHA BOWL WITH BUCHWHEAT AND TOFU

A universal, nutritious Buddha bowl rich in plant-based proteins, perfect for hearty late breakfast (brunch), as well as for lunch or dinner. Another advantage is that this bowl is easy and quick to prepare.

Ingredients
Greens (arugula, lamb's lettuce or spinach)
Cherry tomatoes
Cooked buckwheat
Cooked red beans
Sprouts
Mango
Avocado (optional)
Tofu cubes (see recipe)
Fresh herbs (green onions, cilantro, parsley or any of your favorite herbs)
Dressing: cheddar dressing (see recipe)
For garnish: sesame seeds
Instructions
I bake tofu cubes according to the recipe.
I cut the cherry tomatoes and mango into my preferred shapes.
I assemble a Buddha bowl by layering greens, vegetables, mango, buckwheat, tofu, beans and a few slices of avocado in a dish.
In the center, I add a couple of tablespoons of cheddar sauce and on top I sprinkle some chopped herbs and sesame seeds.
