AVOCADO TOAST WITH BEETS

Here's another unusual combination for avocado toast - with beets. It's a fantastic way to add freshness and color to your everyday meals. This recipe combines the creamy flavor of avocado with the sweet, earthy taste of beets, creating the perfect balance for a late breakfast or lunch. Plus, it's packed with beneficial nutrients that will keep you energized for a long time.

Ingredients
Sourdough bread (see the recipe)
Avocado
0.5 onion
2-3 cloves of garlic
1-2 cooked beets
0.5 cup of apple juice
0.5 cup of lemon juice
Spices: salt, pepper
Instructions
I prepare pickled beets: if I have time, I marinate the beets in advance, at least a few hours or the night before. But if I can’t do it ahead of time, I make them alongside this toast. I slice the beets thinly (I use a mandoline), then squeeze in some orange juice, lemon juice and a little salt. I mix everything together and let it marinate.
I make the avocado cream by adding avocado, part of an onion and garlic cloves into an S-shaped mixer. I blend everything until it's well combined.
I toast the sourdough bread in the oven or a toaster.
To assemble the toast, I take the toasted bread, spread the avocado cream on top and then layer the marinated beet slices.
I garnish it with balsamic or grape cream vinegar (optional) and sprinkle with chopped pistachios.
I serve it alongside refreshing vegetables and greens.
