CHICKPEA BURGERS

This recipe was created with moms in mind, especially those whose kids are used to various types of patties and meatballs, while they themselves want to reduce the amount of meat in their family's diet. So, I present to you chickpea burgers or simply patties that are easy and quick to make with a straightforward list of ingredients that you likely already have in your pantry. You can prepare a larger batch of these patties, store them in the fridge or even freeze them to serve when your kids come home from school, daycare, sports, etc. They can be used to make sandwiches, served alongside mashed potatoes and salad or added to buckwheat porridge and more.

Ingredients
400 g of cooked chickpeas
3-4 cloves of garlic
2 carrots
1 small onion (or half a larger one)
1 teaspoon of mustard
1 teaspoon of tomato paste
3 tablespoons of oats
Spices: salt, pepper, turmeric, cumin, paprika
Instructions
I mash the chickpeas with a fork. I grate the carrots using a fine grater. I press in some garlic and finely chop the onion. I add the other ingredients and mix everything well.
I shape the mixture into burger patties. I place them on a baking sheet lined with parchment paper and bake them in a preheated oven at 200°C for about 15 minutes.

After baking in the oven, I heat a skillet over medium heat. I'm using a ceramic-coated pan, so I don't need any oil, but if yours requires it, just lightly coat the surface with coconut oil. I carefully place the patties in the skillet and cook them for 3-5 minutes on each side until the burgers are nicely browned.
That's it! The burgers/patties are ready. You can use them as you like - serve them with mashed potatoes and vegetables, just like our moms used to do with meat patties, or pair them with buckwheat, Buddha bowls or make a sandwich with a bun or iceberg lettuce (salad-burger).


P.S. When I'm making a sandwich with a bun, I also like to add cheddar sauce (see the recipe), iceberg lettuce and tomatoes.
